Springy things springing!
Pickled carrots! I tasted these once at a restaurant and on a whim I looked them up on the computer and voila! a recipe. Quick, easy, and oh so delicious! Since I was on a roll, I made some pickled beets as well. A pleasant afternoon in the kitchen.
